The Cook's Book

The foundations, chapter 2

Foundations

This chapter is the quiet engine of the book: the stocks, sauces, dressings, pickles and pantry staples that the other chapters lean on. None of them is difficult, but each one teaches a technique you'll use for the rest of your cooking life. Make a stock and you learn gentle heat; make a mayonnaise and you understand emulsions; caramelize onions and you learn patience. Many keep for days or months, so a free Sunday afternoon spent here pays you back on every weeknight that follows. When a recipe elsewhere calls for one of these, store-bought is always allowed, and homemade is usually cheaper.
